Garlic Mashed Cauliflower -- This is an awesome and healthy alternative to mashed potatoes. You use all the same ingredients you would for mashed potatoes. I added roasted garlic, butter, parmesan cheese, salt, and pepper and that's it! As far as the preparation, all you have to do is boil the cauliflower and put all the ingredients in a food processor until blended smooth. Delicious and tastes just like potatoes!
Quinoa Enchilada Casserole - I must say my photo is not as appealing as you'll find on the link for this recipe, but it was just as tasty! Another Tex-Mex dish, but super simple, and adding quinoa threw Ryan for a loop but I was sure to get some meat in there. So I added a pound of ground beef.
Chicken Marengo - A nice light and easy meal to prepare, I especially loved pairing it with angel hair pasta to round out the dish. It had very simple ingredients that you'd have around in your pantry and fridge.
Roasted Red Pepper Alfredo - I've been dying to try this recipe for a while, and I was not let down. It is flavor packed with aromatic basil, along with a slight sweet flavor from the bell peppers, and of course had to add a little chicken in for Ryan.
Sport Tea - If you're looking for a refreshing and healthy iced tea for the summer, this should be your new favorite. It is an awesome natural energy booster! It is a blend of green and black teas, with ginger and citrus flavors within it as well. If you want to try some.. just let me know!
Cherry Crisp - I had some quality baking time with my good friend Sarah Granger with this recipe. I brought the cherries, she provided the oven and helping hand along with the great company. If you ever find your self with a few cups of cherries, put this on your list of sweets to make.
Pesto Chicken Pizza - Our basil is plentiful and if you couldn't already tell we love it! As we make the best use of the pesto, we figured we'd put all of our favorite toppings on a pizza and use it as the sauce. Brilliant! We devoured it between the two of us with leftovers for lunch the next day.
Tikki Masala - I was really scared to make this dish, as it is of the Indian cuisine in which I know practically nothing about. However, with all the spices we had to go buy, we were not let down by any means, and it was super flavorful like nothing we've had before!
Caprese Paninis - Again with the Basil! A simple panini with tomato, basil and mozzarella, was just what we needed for lunch last Saturday. It hit the spot just right.
